Coffee cake doesn’t actually contain coffee as an ingredient, but it is called coffee cake because it pairs well with a cup of coffee.

  1. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and instant coffee granules.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  5. Pour the batter into a greased and floured 9-inch round cake pan.
  6. In a small bowl, combine the streusel topping ingredients: all-purpose flour, brown sugar, ground cinnamon, melted butter, and chopped walnuts. Sprinkle the streusel mixture evenly over the batter.
  7. Cover the cake pan with plastic wrap and refrigerate overnight.
  8. Preheat the oven to 350°F (175°C).
  9. Remove the plastic wrap from the cake pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
