  • 2 cup Pumpkin Puree
  • 1 cup Coconut Milk
  • 0.75 cup Maple Syrup
  • 2 tablespoon Cornstarch
  • 1 teaspoon Pumpkin Pie Spice
  • 0.25 teaspoon Salt
  • 2 tablespoon Coconut Oil
  • 0.5 cup Pecans (optional)
  • 1 cup Almond Flour
  • 0.5 cup Medjool Dates (pitted)
  • 1 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the pumpkin puree, coconut milk, maple syrup, cornstarch, pumpkin pie spice, and salt. Mix until well combined.
  3. In a separate small mixing bowl, combine the almond flour, pecans (if desired), coconut oil, dates, and vanilla extract. Mix until a crumbly texture is formed.
  4. Press the crust mixture into the bottom of a greased pie dish, spreading it evenly.
  5. Pour the pumpkin mixture into the pie dish over the crust.
  6. Bake in the preheated oven for 40-45 minutes, or until the pie is set.
  7. Remove from the oven and let it cool for at least 2 hours to set.
  8. Serve chilled and enjoy!
