  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Add the turkey to the skillet and cook until browned. Remove from heat.
  4. In a separate saucepan, melt the remaining butter over medium heat. Stir in the flour until smooth. Gradually whisk in the chicken broth and milk. Cook and stir until thickened.
  5. Stir in the peas, thyme, salt, and black pepper. Add the cooked turkey and vegetables to the saucepan. Mix well.
  6. Roll out one of the pie crust sheets and place it in a greased pie dish. Pour the turkey mixture into the dish.
  7. Roll out the second pie crust sheet and place it on top of the filling. Trim and seal the edges. Cut slits in the top crust to allow steam to escape.
  8. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Let the pot pie rest for 10 minutes before serving.
