  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and line a deep dish pie pan with it.
  3. In a large bowl, mix together the rhubarb, sugar, cornstarch, lemon juice, vanilla extract, and salt.
  4. Pour the rhubarb mixture into the pie crust.
  5. Dot the top of the filling with butter.
  6. Roll out the second pie crust and place it on top of the filling.
  7. Trim and crimp the edges of the crust.
  8. Cut slits in the top crust to allow steam to escape.
  9. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Allow the pie to cool for at least 30 minutes before serving.
  11. Serve warm or at room temperature.
