Preheat the oven to 375°F (190°C).

In a large skillet, melt butter over medium heat. Add chopped onion and cook until translucent.

Add diced chicken and cook until browned. Remove from skillet and set aside.

In the same skillet, add carrots, peas, and potatoes. Cook until slightly tender.

Sprinkle flour over the vegetables and stir to coat.

Slowly pour in chicken broth and milk, stirring constantly until the mixture thickens.

Add cooked chicken back to the skillet and season with salt and black pepper.

Transfer the mixture to a deep-dish pie pan.

Roll out the puff pastry and place it over the filling, trimming any excess.

Cut slits in the pastry to allow steam to escape.
