  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and line a deep dish pie pan with it.
  3. In a large bowl, mix together the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherry mixture with butter.
  6. Roll out the remaining pie crust and cut it into strips.
  7. Create a lattice pattern on top of the cherry filling with the pie crust strips.
  8. Brush the lattice crust with beaten egg.
  9. Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  10. Remove the pie from the oven and let it cool for at least 1 hour before serving.
  11. Dust the top of the pie with powdered sugar before serving.
