Preheat the oven to 180°C (350°F).

In a large mixing bowl, cream together the butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, mixing well after each addition.

Add the self-raising flour, ground almonds, mixed dried fruit, candied peel, cherries, and almond extract. Mix until well combined.

Grease and line a round cake tin with parchment paper. Pour the cake batter into the tin and smooth the top.

Bake in the preheated oven for 1 hour or until a skewer inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the tin for 10 minutes. Then transfer it to a wire rack to cool completely.

Once the cake is completely cooled, brush the top with apricot jam.

Roll out the marzipan on a surface dusted with icing sugar. Carefully cover the cake with the marzipan.

Divide the icing sugar into separate bowls and add food coloring to each bowl to create different colors.

Roll out each colored icing sugar and cut out shapes using cookie cutters.

Decorate the cake with the icing sugar shapes.

Allow the decorations to set before serving.
