Ingredients
  • 2 cup Zucchini
  • 2 cup All-purpose flour
  • 1/2 cup Cocoa powder
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Semi-sweet chocolate chips
  • 1/4 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. Grate the zucchini and squeeze out any excess moisture.
  3. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini and chocolate chips.
  6. Pour the batter into the prepared baking pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Once cooled, dust with powdered sugar before serving.
