Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

In a large bowl, combine the grated carrots, flour, sugar, oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.

Pour the batter into the prepared pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

In a separate bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Spread the cream cheese frosting over the cooled cake.

Cut into slices and serve.
