  2. In a wok or large skillet, heat the vegetable oil over medium heat. Add the spring onions and carrots, and stir-fry for 2-3 minutes.
  3. Add the barbecued pork to the wok and stir-fry for another 2-3 minutes.
  4. Push the pork and vegetables to one side of the wok and crack the eggs into the empty space. Scramble the eggs until cooked through.
  5. Add the cooked noodles to the wok and toss everything together.
  6. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, salt, and pepper. Pour the sauce over the noodle mixture and stir-fry for another 2-3 minutes.
  7. Remove from heat and let the noodle cake rest for 10 minutes.
  8. Carefully invert the wok onto a serving plate to release the crispy noodle cake.
  9. Cut into wedges and serve hot.
