  1. In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  2. Add the vanilla extract and ground almonds, and mix well.
  3. Gradually add the flour and mix until the dough comes together.
  4. Divide the dough into two equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Roll out one portion of the dough on a lightly floured surface to about 1/4 inch thickness.
  7. Cut out crescent shapes using a cookie cutter or a knife, and place them on the prepared baking sheet.
  8. Repeat with the remaining dough.
  9. Bake for 12-15 minutes, or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  11. Once cooled, spread a thin layer of apricot jam on the flat side of one cookie, then sandwich it with another cookie.
  12. Repeat with the remaining cookies.
  13. Sprinkle sliced almonds on top of each sandwiched cookie.
