Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the chicken breast to the skillet and cook until no longer pink. Remove from heat and shred the chicken.

In a separate saucepan, heat the chicken broth and cream cheese over low heat until the cream cheese is melted.

Stir in the flour until well combined, then add the frozen mixed vegetables and shredded chicken.

Roll out one sheet of puff pastry and line a pie dish with it. Pour the chicken mixture into the dish.

Cover the dish with the second sheet of puff pastry, sealing the edges. Cut a few slits on top for steam to escape.

Brush the top of the pie with the beaten egg.

Bake for 30-40 minutes, or until the pastry is golden brown.
