Ingredients
  • 8 ounce Pie crust
  • 4 cup Peaches
  • 1 cup Granulated sugar
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 2 unit Egg yolks
  • 1 cup Whipped cream
  • 8 unit Mint leaves
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a bowl, mix together the sliced peaches, sugar, cornstarch, lemon juice, and vanilla extract.
  4. Pour the peach mixture into the pie crust.
  5. In a separate bowl, whisk together the heavy cream and egg yolks.
  6. Pour the cream mixture over the peaches.
  7. Bake for 40-45 minutes, or until the crust is golden and the filling is set.
  8. Allow the pie to cool for at least 2 hours before serving.
  9. Serve with whipped cream and garnish with mint leaves.
