  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press mixture into the bottom of a 9-inch pie dish.
  3. In a separate bowl, beat cream cheese, remaining sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the cream cheese mixture into the crust and smooth the top.
  5. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let it cool for 2 hours.
  7. Refrigerate for at least 2 hours or overnight.
  8. Serve chilled with whipped cream and garnish with lemon slices if desired.
