  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, melt the butter over medium heat. Add the leeks and mushrooms, and sauté until softened.
  3. Stir in the flour and cook for 1 minute. Gradually add the milk and vegetable stock, stirring constantly until the mixture thickens.
  4. Add the baby peas, salt, and black pepper. Cook for another 2 minutes.
  5. Roll out the puff pastry sheets and cut into circles to fit the pie dishes.
  6. Divide the leek and mushroom mixture among the pie dishes. Place the puff pastry circles on top and press the edges to seal.
  7. Beat the egg and brush it over the pastry.
  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  9. Allow the pies to rest for 10 minutes before serving.
