Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 Eggs
  • 1 cup Coconut milk
  • 1 teaspoon Vanilla extract
  • 1/2 cup Shredded coconut
  • 1 cup Whipped cream
  • 1/4 cup Toasted coconut flakes
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. Once the cake has cooled, spread whipped cream over the top and sprinkle with toasted coconut flakes.
  8. Serve and enjoy!
