Creamy Chicken, Ham and Leek Pie

Preheat the oven to 180°C (350°F).

Heat butter in a large pan and add the chicken breast. Cook until browned on all sides. Remove from the pan and set aside.

In the same pan, add the sliced leeks and cook until softened.

Add the ham and cook for another 2 minutes.

Sprinkle flour over the leeks and ham, stirring continuously.

Gradually pour in the chicken stock, stirring constantly until the mixture thickens.

Stir in the double cream and season with salt and black pepper.

Return the chicken to the pan and mix well.

Transfer the mixture to a pie dish.

Roll out the puff pastry and cover the pie dish, trimming any excess pastry.

Brush the pastry with beaten egg.

Bake in the preheated oven for 30-40 minutes, or until the pastry is golden and the filling is bubbling.
