  • 200 gram Pie crust
  • 1 cup Sweetened shredded coconut
  • 1 cup Chopped pecans
  • 0.5 cup Unsalted butter
  • 0.75 cup Granulated sugar
  • 3 unit Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Cornstarch
  • 0.25 teaspoon Salt
  • 1 cup Coconut milk
  • 0.5 cup Whipped cream
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the shredded coconut and chopped pecans.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, mix together the cornstarch and salt, then add to the butter mixture.
  6. Gradually stir in the coconut milk until well combined.
  7. Fold in the shredded coconut and chopped pecans.
  8. Pour the mixture into the pie crust and smooth the top.
  9. Bake in the preheated oven for 45 minutes, or until the filling is set.
  10. Allow the pie to cool for at least 1 hour before serving.
