Coffee cake doesn’t actually contain coffee in the cake itself. It is called coffee cake because it is traditionally served with coffee.

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round baking pan.
  2. In a large mixing bowl, cream together the granulated sugar and butter until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream and vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. In a small bowl, mix together the brown sugar, chopped pecans, ground cinnamon, and instant coffee granules.
  5. Pour half of the batter into the prepared baking pan. Sprinkle half of the brown sugar mixture over the batter. Repeat with the remaining batter and brown sugar mixture.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Serve the crack cake as is or with a dusting of powdered sugar.
