  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper cases.
  2. Grate the courgette and squeeze out any excess moisture.
  3. In a large bowl, whisk together the self-raising flour and caster sugar.
  4. In a separate bowl, beat together the vegetable oil, eggs, vanilla extract, and lemon zest.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  6. Fold in the grated courgette.
  7. Spoon the mixture into the paper cases, filling each one about three-quarters full.
  8. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and allow to cool completely.
  10. In a small bowl, mix together the icing sugar and lemon juice to make the icing.
  11. Drizzle the icing over the cooled fairy cakes.
  12. Serve and enjoy!
