Grate the courgette and squeeze out any excess moisture.

In a large bowl, whisk together the self-raising flour and caster sugar.

In a separate bowl, beat together the vegetable oil, eggs, vanilla extract, and lemon zest.

Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

Fold in the grated courgette.

Spoon the mixture into the paper cases, filling each one about three-quarters full.
