  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the flour, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the thyme leaves, chopped olives, and shredded cheddar cheese.
  5. Make a well in the center of the mixture and pour in the milk. Stir until the dough comes together.
  6. Turn the dough out onto a lightly floured surface and knead it gently a few times until it becomes smooth.
  7. Roll out the dough to about 1-inch (5 cm) thickness and use a round biscuit cutter to cut out scones/biscuits.
  8. Place the scones/biscuits on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 12-15 minutes, or until golden brown.
