Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine the flour, baking powder, and salt.

Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.

Stir in the thyme leaves, chopped olives, and shredded cheddar cheese.

Make a well in the center of the mixture and pour in the milk. Stir until the dough comes together.

Turn the dough out onto a lightly floured surface and knead it gently a few times until it becomes smooth.

Roll out the dough to about 1-inch (5 cm) thickness and use a round biscuit cutter to cut out scones/biscuits.

Place the scones/biscuits on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes, or until golden brown.
