In a mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Gradually add the cold water, mixing until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out the dough to a thickness of about 1/8 inch. Using a round cookie cutter, cut out circles from the dough.

Place a spoonful of diced country ham and shredded cheddar cheese onto each dough circle. Fold the circles in half to form a mini hand pie and press the edges together to seal.
