Instructions

  1. Preheat the oven to 375°F (190°C). In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  2. Cut the unsalted butter into small pieces and add it to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. In a separate bowl, mix the cottage cheese, egg, milk, and vanilla extract. Add this mixture to the dry ingredients and stir until a dough forms.
  4. On a lightly floured surface, roll out the dough into a rectangle approximately 1/4 inch thick.
  5. In a small bowl, mix together the ground cinnamon and brown sugar. Sprinkle this mixture evenly over the dough.
  6. Starting from one of the long sides, tightly roll up the dough into a log. Cut the log into 12 equal-sized rolls.
  7. Place the rolls in a greased baking dish and bake for 20-25 minutes, or until golden brown.
  8. While the rolls are baking, prepare the cream cheese glaze. In a mixing bowl, beat together the powdered sugar, melted butter, cream cheese, lemon juice, and milk until smooth.
  9. Once the rolls are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the cream cheese glaze over the warm rolls.
  10. Serve the cottage cheese cinnamon rolls warm and enjoy!
