  • 1 cup Cornmeal
  • 1/4 cup Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Buttermilk
  • 1/2 cup Corn
  • 1/4 cup Green Onion
  • 1/4 cup Red Bell Pepper
  • 2 tablespoon Fresh Basil
  • 2 tablespoon Vegetable Oil
Instructions
  1. In a large bowl, mix together the cornmeal, flour, baking powder, and salt.
  2. In a separate bowl, whisk together the eggs and buttermilk.
  3. Add the egg mixture to the dry ingredients and stir until just combined.
  4. Fold in the corn, green onion, red bell pepper, and basil.
  5. Heat the vegetable oil in a skillet over medium heat.
  6. Drop spoonfuls of the batter onto the hot skillet and cook until golden brown on both sides.
  7. Remove from the skillet and let rest for 5 minutes.
  8. Serve the corn cakes with salsa on the side.
