Ingredients
  • 500 gram Potatoes
  • 1 cup Frozen corn kernels
  • 100 gram Feta cheese
  • 2 stalk Green onions
  • 2 unit Eggs
  • 1/4 cup All-purpose flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 3 tablespoon Vegetable oil
Instructions
  1. Peel and grate the potatoes. Squeeze out any excess moisture.
  2. In a large bowl, combine the grated potatoes, corn kernels, crumbled feta cheese, chopped green onions, eggs, flour, salt, and black pepper. Mix well.
  3. Heat the vegetable oil in a frying pan over medium heat.
  4. Take a spoonful of the potato mixture and flatten it into a patty. Place it in the hot oil. Repeat with the remaining mixture, leaving some space between each patty.
  5. Cook the potato cakes for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove the potato cakes from the pan and place them on a paper towel-lined plate to drain excess oil.
  7. Let the potato cakes rest for 5 minutes before serving.
  8. Serve the corn and feta potato cakes as a delicious appetizer or side dish.
