  • 1.5 cup Gluten-free graham cracker crumbs
  • 4 tablespoon Unsalted butter, melted
  • 2 teaspoon Instant coffee granules
  • 2 tablespoon Hot water
  • 1 cup Cream cheese, softened
  • 0.5 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 0.5 cup Whipped cream
  • 2 tablespoon Chocolate shavings
Instructions
  1. In a bowl, mix the gluten-free graham cracker crumbs and melted butter. Press the mixture into the bottom of mini pie pans.
  2. In a small bowl, dissolve the instant coffee granules in hot water. Set aside.
  3. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Gradually add the heavy cream and beat until well combined.
  4. Add the dissolved coffee mixture to the cream cheese mixture and mix until smooth.
  5. Pour the coffee and cream mixture into the prepared mini pie pans.
  6. Refrigerate for at least 1 hour to set.
