Carrot cake dates back to the Middle Ages when sugar and sweeteners were scarce, and carrots were used as a substitute for sweeteners in desserts.

Preheat the oven to 180°C (350°F). Grate the carrots.

In a mixing bowl, combine the grated carrots, all-purpose flour, granulated sugar, vegetable oil, eggs, instant coffee powder, baking powder, cinnamon powder, and salt. Mix well.

Pour the batter into a greased cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool for 10 minutes. Then, transfer it to a wire rack and let it cool completely.

In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Once the cake has cooled, spread the cream cheese frosting evenly over the top.
