  2. In a mixing bowl, combine the grated carrots, all-purpose flour, granulated sugar, vegetable oil, eggs, instant coffee powder, baking powder, cinnamon powder, and salt. Mix well.
  3. Pour the batter into a greased cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  4. Remove the cake from the oven and let it cool for 10 minutes. Then, transfer it to a wire rack and let it cool completely.
  5. In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  6. Once the cake has cooled, spread the cream cheese frosting evenly over the top.
