Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually mix in the flour mixture, alternating with the milk. Dissolve the instant coffee granules in 2 tablespoons of hot water, then add to the batter and mix well.

In a small bowl, combine the brown sugar and ground cinnamon.

Pour half of the batter into the prepared cake pan, then sprinkle half of the cinnamon sugar mixture over the batter. Repeat with the remaining batter and cinnamon sugar mixture.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
