Coffee and mint are a surprisingly delicious combination that adds a refreshing twist to a classic cake.

  1. Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Dissolve the instant coffee powder in milk and add it to the butter mixture. Gradually add the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. In a chilled bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and mint extract, and continue whipping until stiff peaks form.
  8. Once the cake has cooled, spread the mint cream over the top. Garnish with chocolate shavings.
  9. Allow the cake to rest in the refrigerator for at least 1 hour before serving.
