Coconut Sheet Cake with Hibiscus Sauce

Preheat the oven to 350°F (175°C). Grease and flour a baking sheet.

In a medium bowl, whisk together the coconut flour, all-purpose flour, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into the prepared baking sheet and smooth the top.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, steep the hibiscus tea bags in 1 cup of boiling water for 5 minutes. Remove the tea bags and let the tea cool.

In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Gradually add the hibiscus tea, whisking until the desired consistency is reached.

Once the cake has cooled, drizzle the hibiscus sauce over the top.
