  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with coconut milk. Fold in the chopped peaches and shredded coconut.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
