  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the all-purpose flour, rolled oats, shredded coconut, granulated sugar, baking powder, and salt.
  3. Cut the unsalted butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, coconut milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it together.
  7. Pat the dough into a circle about 1 inch thick. Cut the circle into 8 wedges.
  8. Place the scones on a baking sheet lined with parchment paper.
