In a large bowl, combine the all-purpose flour, rolled oats, shredded coconut, granulated sugar, baking powder, and salt.

Cut the unsalted butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together the egg, coconut milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.
