Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

In a large bowl, whisk together the flour, baking powder, salt, shredded coconut, and sugar.

In a separate bowl, mix together the vegetable oil, coconut milk, vanilla extract, and eggs.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the coconut loaf cool in the pan for 10 minutes.

Transfer the loaf to a wire rack to cool completely before slicing and serving.
