  • 1.5 cup Pie crust
  • 1 cup Sweetened shredded coconut
  • 3 tablespoon Cornstarch
  • 1 cup Granulated sugar
  • 0.25 teaspoon Salt
  • 2.5 cup Milk
  • 1.5 cup Coconut milk
  • 4 large Egg yolks
  • 2 tablespoon Butter
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped cream
  • 0.5 cup Toasted coconut flakes
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the pie crust, shredded coconut, and melted butter. Press the mixture into a 9-inch pie dish.
  3. Bake the crust for 10-12 minutes, or until golden brown. Remove from the oven and let it cool completely.
  4. In a saucepan, whisk together the cornstarch, sugar, and salt. Gradually whisk in the milk and coconut milk.
  5. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil.
  6. In a separate bowl, whisk the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture.
  7. Pour the egg mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.
  8. Remove the saucepan from the heat and stir in the butter and vanilla extract until smooth.
  9. Pour the filling into the cooled pie crust and refrigerate for at least 2 hours, or until set.
  10. Before serving, top the pie with whipped cream and toasted coconut flakes. Enjoy!
