  3. In a separate bowl, whisk together the coconut oil, maple syrup, vanilla extract, and coconut milk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing well until a thick batter forms.
  5. Grease a muffin tin or line with cupcake liners.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until the tops are golden brown.
