Coconut Cake with Chocolate Chunks and Coconut Drizzle

Preheat the oven to 350°F (175°C). Grease and flour a cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut and chocolate chunks.

Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the coconut drizzle by whisking together the powdered sugar and coconut milk until smooth.

Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
