Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Sugar
  • 1 cup Shredded coconut
  • 1 cup Coconut milk
  • 1/4 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 2 Eggs
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, baking powder, salt, sugar, and shredded coconut.
  3. In a separate bowl, whisk together the coconut milk, vegetable oil, vanilla extract, and eggs.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Transfer the bread to a wire rack and let it cool completely before slicing.
