Clementines are a type of mandarin orange and are named after Father Clément Rodier, who is said to have discovered the fruit in Algeria in the late 19th century.

  1. Preheat the oven to 180°C (350°F) and grease a cake tin.
  2. Boil the clementines for 2 hours, then drain and cool.
  3. Cut the clementines in half and remove any seeds.
  4. In a food processor, blend the clementines until smooth.
  5. In a separate bowl, whisk together the almond flour, caster sugar, eggs, baking powder, and ground almonds.
  6. Add the blended clementines to the mixture and stir until well combined.
  7. Pour the batter into the greased cake tin and bake for 25 minutes.
  8. Remove the cake from the oven and let it cool for 10 minutes.
  9. Dust the top of the cake with icing sugar before serving.
