  1. Preheat the oven to 375°F (190°C). Wash the clementines and boil them whole in a large pot of water for 2 hours. Drain and let them cool.
  2. Cut the clementines in half and remove any seeds. Place them in a food processor and blend until smooth.
  3. In a mixing bowl, combine the almond meal, powdered sugar, eggs, baking powder, and salt. Mix well.
  4. Add the blended clementines to the mixing bowl and stir until well combined.
  5. Grease a 9-inch cake pan and pour the batter into it.
  6. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it rest in the pan for 10 minutes.
  8. Transfer the cake to a wire rack to cool completely.
  9. Serve the clementine cake dusted with powdered sugar, if desired.
