Preheat the oven to 180°C (350°F). In a mixing bowl, cream together the butter and caster sugar until light and fluffy. Beat in the eggs, one at a time, adding a spoonful of flour with each addition. Fold in the remaining flour and vanilla extract until well combined. Divide the batter equally between two greased and lined 20cm (8-inch) round cake tins. Bake in the preheated oven for 20-25 minutes, or until golden and springy to the touch. Allow the cakes to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely. Once cooled, spread strawberry jam on one cake layer and place the other cake layer on top. Dust with powdered sugar before serving.
