  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  3. Roll out one pie crust and place it in a pie dish. Pour the cherry mixture into the crust.
  4. Dot the top of the cherry mixture with butter.
  5. Roll out the second pie crust and place it on top of the cherry filling.
  6. Trim and crimp the edges of the pie crust.
  7. Cut slits in the top crust to allow steam to escape.
  8. Brush the top crust with beaten egg.
  9. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Allow the pie to cool for at least 1 hour before serving.
