  1. Preheat the oven to 425°F (220°C).
  2. Roll out one pie crust and place it into a 9-inch pie dish.
  3. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Mix well.
  4. Pour the apple mixture into the pie crust, spreading it evenly.
  5. Dot the top of the apple mixture with small pieces of butter.
  6. Roll out the second pie crust and place it over the apple filling. Trim the excess crust and crimp the edges to seal.
  7. Cut a few slits on the top crust to allow steam to escape.
  8. In a small bowl, whisk together the beaten egg and milk. Brush the mixture over the top crust.
  9. Sprinkle turbinado sugar over the top crust.
  10. Place the pie on a baking sheet and bake for 45 minutes, or until the crust is golden brown and the filling is bubbling.
  11. Remove from the oven and let the pie cool for at least 30 minutes before serving.
