In a large skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.

Add the ham, potatoes, carrots, peas, salt, pepper, and thyme. Cook for 5 minutes, stirring occasionally.

Sprinkle the flour over the mixture and stir until well combined.

Slowly pour in the chicken broth and heavy cream, stirring constantly. Cook until the mixture thickens.

Transfer the mixture to a greased baking dish.

Roll out the puff pastry and place it over the filling. Trim any excess pastry and crimp the edges.

Brush the pastry with beaten egg.

Bake for 30-40 minutes, or until the pastry is golden brown and the filling is bubbly.
