Preheat the oven to 180°C (350°F).

Heat butter in a large pan over medium heat. Add chicken breast and cook until browned. Remove from the pan and set aside.

In the same pan, add leek and mushrooms. Cook until softened.

Add flour to the pan and cook for 1 minute, stirring constantly.

Gradually add chicken stock, stirring constantly until the sauce thickens.

Stir in double cream and season with salt and pepper.

Return the chicken to the pan and mix well.

Transfer the mixture to a pie dish.

Roll out the puff pastry and place it over the pie dish, trimming any excess pastry.

Beat the egg and brush it over the pastry.

Bake in the preheated oven for 30-40 minutes, or until the pastry is golden brown.
