  1. In a large skillet, cook the ground pork, onion, and garlic over medium heat until pork is no longer pink. Drain any excess fat.
  2. Stir in thyme, sage, salt, black pepper, cloves, and nutmeg. Cook for an additional 2 minutes. Remove from heat and let cool.
  3. Preheat oven to 400°F (200°C).
  4. In a large bowl, combine flour and butter until mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until dough forms a ball.
  5. Divide dough in half. On a lightly floured surface, roll out one portion to fit a 9-inch pie plate. Transfer pastry to pie plate.
  6. Spoon pork mixture into pastry-lined pie plate. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal, and flute edges. Cut slits in top.
  7. Brush beaten egg over pastry. Bake for 35-40 minutes or until crust is golden brown. Let stand for 10 minutes before serving.
