  1. Preheat the oven to 160°C (320°F) and line a 20cm (8in) round cake tin with parchment paper.
  2. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, until well combined.
  4. Sift in the self-raising flour and add the mixed dried fruit, mixed peel, blitzed almonds, ground cinnamon, ground nutmeg, and brandy. Mix until all ingredients are evenly combined.
  5. Pour the cake batter into the prepared tin and smooth the top with a spatula.
  6. Bake in the preheated oven for 60 minutes or until a skewer inserted into the center comes out clean.
  7. Remove the cake from the oven and allow it to cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Once the cake is completely cooled, warm the apricot jam in a small saucepan and brush it over the top of the cake.
  9. In a separate bowl, mix together the icing sugar and water to make a smooth icing. Drizzle the icing over the cake.
  10. Allow the icing to set before serving.
