Ingredients
  • 2 cup All-purpose flour
  • 1/2 cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Buttermilk
  • 1/2 cup Marshmallow creme
  • 1/2 cup Powdered sugar
  • 2 tablespoon Unsalted butter, melted
  • 2 tablespoon Milk
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined.
  6. Drop rounded tablespoons of batter onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the tops spring back when lightly touched.
  8. Allow the cookies to cool completely.
  9. In a small bowl, mix together the marshmallow creme, powdered sugar, melted butter, milk, and vanilla extract until smooth.
  10. Spread the filling onto the flat side of half of the cookies.
  11. Top with the remaining cookies to create sandwich pies.
  12. Serve and enjoy!
