  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture and mix until well combined.
  6. Stir in the rolled oats.
  7. Drop rounded tablespoonfuls of dough onto a greased baking sheet and flatten slightly.
  8. Bake for 10-12 minutes or until golden brown.
  9. Allow the cookies to cool completely.
  10. Spread marshmallow creme on the bottom side of half of the cookies.
  11. Top with the remaining cookies to create sandwiches.
  12. Dip each sandwich cookie into the chocolate ganache, allowing the excess to drip off.
  13. Place the dipped cookies on a wire rack to set.
  14. Allow the chocolate to set for 30 minutes before serving.
