Chocolate Mudslide Pie
The Mudslide cocktail, which inspired this pie, was created in the 1950s at the Wreck Bar in the Cayman Islands.

Preheat oven to 350°F (175°C).

In a medium bowl, combine the chocolate cookie crust and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

In a microwave-safe bowl, melt the chocolate chips. Stir in the Baileys Irish Cream, instant coffee granules, and vanilla extract until smooth.

In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Fold the whipped cream into the chocolate mixture.

Pour the filling into the prepared crust and smooth the top.

Bake for 15 minutes, then remove from the oven and let it cool for 10 minutes.

Refrigerate for at least 2 hours to set.

Before serving, garnish with whipped cream and chocolate shavings.
