Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a round cake pan.
  2. Melt the chocolate and butter in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.
  3. In a separate bowl, beat the eggs and sugar until light and fluffy. Gradually add the melted chocolate mixture and mix well.
  4. Sift in the flour and gently fold until just combined. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. In a small bowl, dissolve the gelatin in water and let it bloom for 5 minutes. Microwave for 10 seconds to melt the gelatin.
  7. In a large bowl, whip the cream until soft peaks form. Gradually add the dissolved gelatin and vanilla extract, and continue to whip until stiff peaks form.
  8. Cut the cooled cake horizontally into two layers. Place one layer on a serving plate and spread a layer of whipped cream on top. Place the second layer on top and cover the entire cake with the remaining whipped cream.
  9. Dust the top with cocoa powder and decorate with fresh berries. Refrigerate for at least 2 hours before serving.
  10. Enjoy the rich and indulgent Chocolate Mousse Cake!
